Fixings
- 1 aubergine, in 1cm cuts
- 1 courgette, in 1cm cuts
- 1 red pepper, in 1cm cuts
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 2 tsp dried oregano
- 200g cherry tomatoes
- 1 sachet of Trader Gourmet Brilliant Grains
- Juice of 1 lemon
- 100g feta cheddar
- 50g pine nuts
Directions
- Warmth your stove up to 180ºc.
- Hurl the aubergine, courgette and red pepper with the olive oil, salt, pepper, and oregano. Spread the vegetables out equally in a preparing plate and fly in the broiler for 20 minutes.
- Expel the vegetables from the stove, including the cherry tomatoes and hurl everything together. Return the dish to the broiler for an additional 15 minutes.
- Following 15 minutes include the Shipper Gourmet Superb Grains and lemon juice to the cooking dish and blend them in with the meal vegetables. Sprinkle the feta and pine nuts to finish everything and return the skillet to the broiler for a last 5 minutes to warm everything through. Present and appreciate!
